Ingredients
- 2 1/2 cups of chickpeas
- 3 tablespoons chickpea reserve or water
- 4 tablespoons of lemon
- 1 tablespoon of olive oil
- 4 garlic cloves
- 2 onions
- 3 tablespoons of tahini
- 1 tsp sea salt
- Optional garnish: parsley, basil, or paprika and olive oil drizzle
Directions
- Sauté onions in 1/2 tablespoon of olive oil until golden brown
- Add into food processor the rest of olive oil, tahini, lemon, garlic cloves, chickpea reserve (or water) and chickpeas
- Blend until smooth
- Add caramelized onions to mixture and blend until smooth
- Let cool in fridge for at least 1hour, or until cold
